MO BAR, the NEW bar concept at Mandarin Oriental Singapore

I often think that living in Singpaore is a huge blessing as besides being a melting pot of good food, culture and heritage, we have some of the best bars in the world. Collaborated with award-winning bar developers, Proof & Company, I am very sure that the newly launched bar concept at Mandarin Oriental Singapore, MO BAR, is joining Singapore’s vibrant bar scene with a bang.

Located at Mandarin Oriental level four with floor to ceiling windows, MO BAR is one place that you can enjoy beautiful views of the Marina Bay while enjoying your cocktail or small bites.

There are also 2 kinds of seatings available. One can choose from the high stool seating by the bar to watch the bartenders in action or to relax in those cosy comfy chairs.

By day, you can also enjoy afternoon tea at MO Bar. The menu changes every bi-monthly and currently the theme for Jan and Feb is Victoria Harbour. MO Bar’s Afternoon Tea is priced at $48 per person and $88 for two persons and includes a pot of coffee or TWG tea. You can also enjoy one cocktail or mocktail and a glass of “R” de Ruinart champagne if you opt for the $65 per person set.

There are 14 cocktails available on the menu on top of the list of mocktails, beers and wines, and MO BAR Pilsner which is developed in collaboration with local craft brewery, Archipelago.

Inspired by the Pacific Ocean, the Coral Sea and South East Asia, the cocktails at MO BAR are deeply linked to the flavours, customs, and myths around the region. One can start with a low alcohol content cocktail to full strength concoction to end the night. We started our night with THE ROARING CITY ($24) which is made with Sparkling Pineapple Tapache and topped with a Vermouth Jelly. This is a nice starter which is not too sweet and has a zesty finish. If not, you can also order SEA BEAST ($28) a light refreshing cocktail which you can have your sashimi at the same time.

COCONUT BEACHES OF FIJI ($28) is a pretty drink that reminded one of a tropical holiday lying by the beach with sea breeze gently blowing on the face.

For those who are looking for a medium alcohol strength cocktails, there are quite a few for your selection. From MOTHER OF DRAGONS ($26) which is a beautiful drink served with an oriental dragon drawing on a sweet rice paper to TWILIGHT BY THE BAY ($28) which is prepared with Fermented Mangosteen and Cinnamon Rum By The Sea. After chatting with the bartenders, they shared that TEA TIME ($28) is one of their favourite as it is creamy yet balanced and served with a | Arrack Cashew Cake ($28) at the side.

For those who have the love for Manhattan cocktail, you can try ROUGH WATERS BY THE CORAL SEA ($26) which is made using barrel aged water and herb cognac and served with edible coral and a mild red pepper sauce to give a savoury flavour to the drink. Other cocktails for those with a stronger palette include 7000 LEAGUES AHEAD ($24) which is G&T with Kaffir Lime Leaf or BACK TO BALI ($26), MO Bar’s version of Long Island Tea.

If you are feeling peckish, don’t miss the bar bites that are available. To be honest, the quality of the food is definitely unlike your usual bar food offerings. The silky smooth somen noodles served with generous chunks of Tasmanian crab, shallot, chive and crab roe was one of our favorites if you are looking for a pre-drink light dinner. While the Phoenix Wings ($32) which was perfumed with the aroma of lemongrass and the Indov-China Prawn ($26) which was coated in Masala Mayo are great nibbles if you prefer something more fuss free. Although Singdog ($26) was a bit messy to have but it was one of my favorites as the otah sausage and sambal mayo appealed to my love for spices.

For those with sweet tooth, don’t forget to check out the Hazelnut Souffle ($18) which required a waiting time of at least 20 minutes. The fluffy light souffle with caramelized hazelnut reminded me of warm Nutella but even better!

MO Bar is definitely not just a place for you to catch the beautiful skyline of Marina Bay, it is a destination for all who wanted to catch up with friends in the afternoon over a wide selection of tea with a cosy ambiance and to let your hair down in the evening with quality bar snacks and pretty yet delicious cocktails.
