With my 2018 resolution of staying more in tune with my health and eating clean, I was happy to know that Capella Singapore’s designer kitchen, Chef’s Table is adding a healthier option on top of its classic afternoon tea, the Wellness Tea Time every Friday from 3:00pm to 5:00pm!
Sandra Lim of Live Fruitfully, a certified Raw Food Chef from The Matthew Kenney Culinary Institute, together with Chef David Senia, the Culinary Director of Capella Singapore, have teamed up to create a holistic menu of unique dishes using wholesome ingredients.
One would be greeted with a cup of cold chamomile tea to relax yourself before the starter was served to the table.
Recognizing that tea being an important part of an afternoon tea, The wellness afternoon tea from Capella Singapore was paired with a selection of three wellness teas from Ronnefeldt Ayurvedic teas for diners to chose from – a cocoa-rich taste with light floral notes Stay in Balance; an invigorating herbal Light My Flame or the smooth green tea blend Let It Go.
One of the favourite amongst my fellow dining partners (including some carnivores) was the Crispy Charcoal Tuile with Root Vegetable Hummus. Unlike hummus that I had previously which had a grainy texture, the sweet potato hummus was smooth, tangy and refreshing. The charcoal tuile and edamame also gave the hummus a contrasting texture while I personally enjoyed. Tempeh Portobello Slider with Green Goddess Cream was a pleasant surprise for the non-mushroom eaters. Sandwiched between the homemade flax seed bun, the tempeh and portobello mushroom was brilliantly made into a burger patty which one would take a second bite before realising what were the ingredients used. However, the combination was very harmonized and balance, making it a great non-meat slider.
Next up, we had the Cauliflower Millefeuille with Shiitake Bacon and Sprouted Whole Grain Bread with Tomato Tapenade. This pair of savoury delights were very well played. I like how Chef Sandra used 5 different grains which includes brown rice, black rice and lentil to make the Sprouted Whole Grain Bread which gave it layers of different texture with a lovely chewy (in a good way) bite. Oh yes, this is very filling as well and the tomato Tapenade was mind blowingly good – piquant yet sweet and very appetizing. Cauliflower Millefeuille with Shiitake Bacon was served in a dainty manner but packed with intense flavour as the Shiitake mushroom was first dehydrated before it was served with a smooth corn puree.
When I heard the word “GLUTEN -FREE”, initially I wasn’t very not motivated to try the scones. My idea of a good scone got to be one that was moist, light and fluffy but gluten-free bakes usually tasted like cardboard. However, the Cranberry Scones with Raspberry Chia Jam and Whipped Coconut Cream from Capella surprised me with that alluring aroma and the texture was soft and not too densed. The lovely scones made from almond flour and coconut flour were good on its own but the jam and coconut cream also complimented them beautifully!
The desserts were an awesome selection of 4 carefully curated sweet treats made with unrefined sugar choices such as maple syrup and vegan chocolate chips. The colourful daintiness includes a Quinoa and Zucchini Chocolate Tea Cake; the Chocolate Hazelnut Dome; Cultivated ‘Cheesecake’ with Blueberry and Beetroot Glaze and Cacao Avocado Mousse. Out of the four, my heart went out to Chocolate Hazelnut Dome which has a chewy yet yummy tart base made using aqua fava and 5 different flours (so must effort put in to a tart base, right?). While it has banana as one of its ingredients, the smell of the banana was well concealed that I almost couldn’t detect it!
The afternoon tea was rounded up with a refreshing Tomato Consomme Jelly with Basil Granita.
What I really like about this wellness afternoon tea from Capella Singapore is, it highlighted a medley of plant-based, gluten-free and dairy-free savoury and sweet creations which were healthy, delicious and not loaded with unnecessary calories. The worries of food coma is not found and the body feel really clean the day after.
