Flavours of White Asparagus @ Pool Grill

Yay! It is the time of the year where we welcome fresh produces from this beautiful Spring season which included the white asparagus! Yes, WHITE APARAGUS!! Crowned as the king of vegetables in Europe, these white asparagus only made a brief appearance every spring which was why they are also dubbed as “white gold”! With a more delicate flavour (juicer, earthier, more tender and with a more nuttier flavour) as compared to its green cousin, the green asparagus, it was considered a rare spring delicacy even among the chefs. From now to 30 April 2018, Pool Grill at Singapore Marriott Tang Plaza Hotel has prepared a special menu of 3 different white asparagus dishes for white asparagus lovers.

For purists who are looking at having the white asparagus cooked in one of the most traditional and healthy way, Steamed White Asparagus with Poached Egg and Hollandaise Sauce ($22++ per portion) definitely hit the mark. The flavours of 5 beautifully steamed white asparagus were retained with this method and one can taste the natural sweetness of this highly revered spring vegetable. Oh yes, sometimes less is more!

Another traditional method is to cook the white asparagus in butter. Oh yes, that buttery note in the Mimosa Style Gratinated White Asparagus with Manchego Cheese & Chorizo Migas ($24++ per portion) was to live for! This is highly recommended for anyone who like to have different layers of flavours in a dish. Imagine juicy stalks of white asparagus with a cheesy gratinated egg, smoky yet savoury chorizo migas and generous manchego cheese shavings, gosh I was drooling as I am writing this!

Ravioli fans should not miss the Squid Ink and Scallop Ravioli with White Asparagus & Tomato Butter ($38++ per portion)! I promised that the squid ink will not stain your teeth as it was infused into the pasta dough. But what you will get is a party in the mouth as you savor this flavour-bursting dish. While the ravioli was cooked till al denta, the sweetness from the sliced scallop complemented the squid paste filling in this italian dumpling and the white asparagus.
