Curry Tsukemen at Machida Shoten

It would not be bad to have a good Tuskemen anytime. For the uninitiated, Tsukemen is a ramen dish consisting of usually thick noodles which are eaten after being dipped in a separate bowl of soup or broth.
I haven’t had Tsukemen for a while so it was timely when Machida Shoten launched a Singapore only Curry Tsukemen ($15).

It was my first time trying the noodles from the group I have to admit. Machida Shoten was founded on the border Tokyo city of Machida in 2008 and has since became an influential global ramen player, having outlets from Los Angeles to New York City, and at the same time offering consulting services to other ramen-yas.

With such high accolades, I was pretty impressed with the Curry Tsukemen. The noodles were thick and each bite had an addictive textural feel which I can’t draw any comparison to any noodle dish since Tsukemen is so unique to begin with. If you are expecting a heavy curry sauce for the noodles, you might be in for disappointment. The curry however, lends a nice finish to the dried Katsuo-pork based broth.

My dining companion had the Special All-In Tonkotsu Ramen ($17). The noodles were thin and pork broth pretty standard. For an extra $4, you get the option of a Kaedama or extra serving of noodles.

Accompanying the ramen dishes was the Seasoned Iberico Spareribs ($14). I wasn’t such a big fan of pork so I left it to my companion to do the verdict. The Spanish spareribs were first boiled in water, then seasoned with the specially made Machida Shoten’s original sweet soya sauce and mirin. The result was a meat dish, caramelised, tender and flavourful.
It left my dining companion in awe though they were not the neatest thing to eat.
