Located at the summit of ION Orchard on the 55th and 56th floors, Salt grill & Sky bar is known for its stunning city skyline view. But the restaurant with modern Australian fare has recently introduced a new Executive Chef Jake Kowalewski who brought in a produce-forward culinary style to the table. One can now expect a reassemble combinations of both Australian and Asian ingredients. This can be seen on the Five-Course Christmas Dinner Menu that is only available for dinner on 24 & 25 December 2018.
My advice is go easy with the bread made in house even though it can be very addictive with that soft fluffy innard and crusty exterior.
Chef Jake Kowalewski’s culinary style can be seen on the Hokkaido Scallop appetizer. Seasoned with Nam Jim, Crustacean Oil and Puffed Rice this is a refreshing yet savoury way to start the dinner with a nice textural bite.
The Stracciatella di bufala, a variety of soft Italian buffalo cheese, is introduced with different layers of textures and flavours with crunchy slices of peach, pickled beetroot, olive and smoked olive oil.
One of my favourite dish from the Christmas menu got to be the Bangalow Pork which is juicy, tender and has the right amount of fats. Oh yes, did I mentioned that the pork is both hormone and antibiotic free? With a classic pairing of apple and ginger puree, fermented cabbage and verjuice glaze, the dish is well balanced and satisfying.
One of the dish that got the approval from my fellow diner was the Whiskey-glazed Wagyu Short Rib which is very fork tender after long hours of cooking. Oh yes, I like the mashed potato as it has an unique smokiness to it.
Dessert was a good play on the texture and flavours. The coffee lover in me delighted at the sight of coffee and the lovely creaminess of the mascarpone and chocolate. The slight saltiness and popping candies brought a nice magical surprise to the palate and end the meal on a lighthearted note.
