屠妖节奏鸣曲 – 印度之歌 (The Song of India)

位于史各士路(Scotts Road)上的餐厅印度之歌(The Song of India)连续第二年摘得米其林一星的荣衔,也是新加坡唯一一家上榜的印度餐厅,将于今年的屠妖节(Deepavali)推出特别套餐与食客们共飨佳节。套餐分为素食与非素食两种,各S$79++,只在10月18至22号这五天里供应。


主厨Manjunath Mural提到在印度一般民众在屠妖节当天都已素食为主,与华人或其他族群庆祝节日时大鱼大肉的习惯有所不同。为了更贴近屠妖节,笔者当晚选择了素食套餐。第一道上的是秋爽芦笋汤(Autumn Sensation Asparagus Shorba),汤上撒有花瓣及香料,汤色绿意盎然、滋味甘甜清爽,再配上一根小脆条更具风味。小脆条是孟买的当地小吃,一般都搭配茶与咖啡一起享用,主厨把家乡的味道创新地融入到了这道汤里来。

前菜主要由两样菜肴组成,第一样是由豆腐、芽菜以及石榴制成的烤串(Tofu, Sprouts & Anardana Kebab),烤串由几种食材混制,尤其石榴果粒掺杂其间给人带来更丰富的口感。
第二样是扁豆饺配酸奶汁(Mangoori Yoghurt Tokri Chaat), 以小扁豆做的饺子炸后配上酸奶汁,盛放在一个小饼碗里,一并吃进嘴里酥脆可口,酸奶汁让整道菜更加开胃。
这两样菜之外,前菜也配搭有另两样屠妖节的小食,如腌制菜以及面粉小脆条配花生。整个摆盘色彩缤纷,宛如一件艺术作品,赏心悦目。

主菜是饭搭配五种配菜及一杯饮料,分别是:
九珍饭(Navratan Pulao),由印度香米混合九种果仁煮制而成。
印度奶酪马萨拉(Paneer Khada Masala),印度奶酪(Paneer)口感及味道就像豆干,不像在吃奶酪,非常特别。
三色素肉丸咖喱(Tiranga Kofta Curry),以菠菜和芝士制成的素肉丸置入烟熏番茄酱里。
香蕉花素菜(Banana Flower Ki Bhaaji),口感爽脆的香蕉花配搭开胃的马萨拉酱。
喀什米尔式莲藕(Kashhmri Nadru),莲藕酿有奶酪,搭配香菜薄荷腰果汁。
古吉拉特式酸奶咖喱 (Gujrati Kadhi),印度料理都已酸奶来中和上火的食材,这道酸奶咖喱就起着“降火”的功效,但别看这道咖喱呈白色看似温和,但后劲非常火辣!
芒果饮料(Aam Ka Panna),味道非常清爽,喝完后就像把味蕾给清洗干净了一番。


搭配主食的也有喷香的各式印度馕饼,这些馕饼都在餐厅一隅的开放式厨房里由厨师们手工制作烘烤出来。

最后的甜点也以拼盘方式呈现,后边绿色的是印度槟榔与开心果冰淇淋(Paan & Pistachio Kulfi),味道非常奇特,近似薄荷的味道,非常清新。前面六样则是印度节庆里的甜食Mithai,口味有芒果、玫瑰、无花果、椰糖、黑芝麻等,主厨也改良了食谱,把糖减半以适应新加坡的口味。

餐厅里也能买到Mithai礼盒,价格由S$45++到S$125++不等。
总体来说,屠妖节套餐对男生来说分量可能有些少,但口味方面,与我们在新加坡吃到的印度菜有非常大的分别,非常特别也新颖。
