As a person who likes my drinks, I have always wondered about what would go with my Japanese food besides Sake. Good news is I have found an alternative.
Suntory has recently launched a new gin, SUI 翆, in Singapore for the first time. SUI 翆, which also means kingfisher in Japanese is made with 8 botanicals such as juniper berry, coriander seed, angelica root, cardamom, cinnamon, bitter orange peel and lemon peel as well as with 3 unique Japanese botanicals yuzu, green tea and ginger. It is acclaimed to pair exceptionally with Japanese food. So let’s give it a try.
To enjoy the refreshing taste of SUI gin, it is said that ratio is very important. Hence, do remember to keep to the ratio of 1:4 for any highball. If you are looking at adding some ingredients to accentuate the taste profile, we have tried to have it with ginger, yuzu, lemon, lime, shiso leaves and green tea. My personal favourite is the lemon one as it made the highball really refreshing and complement with food better. And my favourite food to pair with is actually the Buta Shogayaki with SUI Soda and Shiso as the highball cut through the greasiness of the pork and offers a gentle umami note that goes hand in hand.
On its own, SUI has a refreshing yuzu citrus note which follows by a smooth body with a hint of green tea and juniper on the palate. The finish was gentle with light peppery and ginger note at the back of the throat.
