Cha Thai – 泰式好滋味

header直落亚逸(Telok Ayer)一带的餐厅非常多,平时都是大家周末或下班后与朋友家人聚餐小酌几杯的好地方,位于直落亚逸路80号的泰式餐厅Cha Thai就为大家提供了品尝泰式料理的另一好去处。
Cha Thai开业已一年,其主厨及厨房团队均来自泰国,餐厅招牌是选用泰国进口的虎虾而制作的各式虎虾料理。

譬如这道泰式炸虾饼 (Crispy Prawn Cake, $15) 就用了虎虾而不是一般的虾子来制作,与其他餐厅相比,这里的虾饼个头较大,因选用虎虾口感也更加厚实饱满。

多数人到泰式餐厅必点的菜色之一想必是泰式咖喱,Cha Thai 的招牌帕捻红咖哩虎虾 (Signature Tiger Prawn ‘Panang’ Curry, $28) 也是不能错过的招牌之一,这道红咖喱里特别加入了几颗肥美的荔枝,品尝浓稠热辣的咖喱与厚实的虎虾之余,荔枝的清甜更赋予了这道红咖喱别样的清爽滋味。

香茅虎虾沙拉 (Lemongrass Prawn Salad, $28) 则是用香茅等香料炒制的肉碎浇在水煮的虎虾上衬出虾的清鲜。这道沙拉与帕捻红咖哩虎虾都非常的开胃下饭。

这道特大虎虾粉丝煲( Premium Giant Tiger Prawns Claypot Glass Noodles, $159) 的价格虽看似不便宜,但其实以其分量(4人份)及上乘质量(比巴掌还大的虎虾)来看,这价格就变得是合情合理的了。带香浓酱汁的粉丝与虎虾堆放在瓦煲里焖焗,虎虾的鲜甜都被逼到粉丝里,就算单吃粉丝也能品味到虎虾满满的鲜味。当然除了虎虾料理,Cha Thai 也有许多其他非常值得一试的泰式料理。

东炎汤素饺(Tom Yum Vegetarian Dumplings) $18
到泰式餐厅要是没吃冬炎汤就感觉少了什么似的感觉,Cha Thai的东炎汤香辣正宗而且是素食的,东炎汤搭配以豆制品为馅料的饺子更显得相得益彰。

泰式卤猪脚( Simmered Pork, $22) 与中式卤猪脚相比是更加的浓甜,更大的差别是泰式猪脚还会蘸配红辣酱,咸辣调和,别有一番风味。

Cha Thai也有面饭之类的主食,如泰式炒面(Pad Thai, $22) 又可见到肥美的招牌虎虾。船面 (Boat Noodle, $18) 的汤头则选用了20种香料熬制,非常香浓诱人。Cha Thai每道料理的分量都相当大,适合多人聚餐,但所提供主食也适合“孤独的美食家”们独自前来享受一顿美餐。

甜品的选择也非常多,除传统泰式甜点如芒果糯米外,还有许多店家的创新甜点,譬如香脆的黑碳面包 (Charcoal Toast, $8) 方块,并搭配泰式奶茶及班兰口味的甜蘸酱。

新加坡有名的恐龙美禄 (Milo Dinosaur, $8) 在这里也做成冰品并搭配泰式的炸薄脆一起吃。这两样甜品都是融合了本地与泰国的风味而创做出的新品菜式。
新加坡的泰式餐厅非常多,Cha Thai 在其中算是属于高价位的一家餐厅,但这所谓的高价位其实都来自于店家对高质量食材及烹饪技术的追求。虎虾的价格并不便宜,所有肉类烹制之前都以真空低温烹饪法(Sous Vide)来处理以带出肉类的最佳风味,所有的酱料香料也都是店家亲自研磨准备。就像Cha Thai 的标语所言“我们以品质服务于您”(We Serve Quality),其高品质确实值得这般的价位。
