Located at the Kampong Glam vicinity, Hyde & Co is not any new kid on the block. However, with a constant upgrade and revamp of the menu, one can never be sure to declare that you have tried all the items here. But what are the dishes to try here? Follow me on the quest to find out more.
My Fair Lady ($7.50)
No matter where we go, the first item to order is usually the beverage. At Hyde & Co. one of their signature is their tea-tails. To be exact, tea-tail is just a name that I have given to their specially concocted beverages using their in house tea blend. There are 4 of these and they are rotated on a regular basis. My Fair Lady is an iced earl grey tea blended with calendula flowers, hibiscus, sunflowers blossoms and rose petals infused with milk. In short, it is similar to iced milk tea but in a more delicate way with beautiful floral and citrusy notes.
Into the Woods ($7.50, left), The Addams Family ($7.50, right)
I have found one of my favourite drink here to be Into The Woods which is both fruity and refreshing. For the fans of Addams Family, perhaps you can try the The Addams Family which is made using Moroccan apple tea.
If presentation is important to you, you will be thrilled to find that the skilled baristas at Hyde & Co. will pour you a beautiful swan frolicking in your cuppa. Bold Heart is a coffee blend of 3 beans (Columbia, Sumatra and Bazil) which is medium bodied with a lovely nutty finish.
Buffalo Wings ($10)
You can find buffalo wings everywhere but not the homemade garlic aioli dip which is simply yummy. Simply love the tiny bits of garlic in the sauce. Vampire, stay away! Don’t say I didn’t warn you ah. =P
Truffle Mac & Cheese ($18)
Imagine carbonara with the pasta replaced with macaroni, drizzled with truffle oil, oven baked with mozzarella cheese and topped with panko (Japanese breadcumbs) for that crunchy bite. Yup, this is what you get in this plate of mac & cheese which is good to share or be a meal on its own.
Assam Halibut ($21)
The 120g Halibut fillet was pan seared to give the skin that crispy bite and laid onto a bed of buckwheat soba. Accompanying it was the homemade assam sauce, french beans and roasted cauliflowers which gives you your serving of fibre. The piquant assam sauce was a great component that pulled everything together beautifully. My only complaint was the soba was too firm and al dente than I would like it to be. If you are like me, perhaps you can highlight to the service crew about your preference when you place your order.
Nasi Lemak Risotto ($22)
Nasi Lemak being one of my favourite food and I thought Nasi Lemak Risotto was an interesting twist from what I am familiar with. But the tricky part of the dish was the cooking of risotto. 1 minute too early or 1 minute too late to remove it from heat would cost a huge difference in the texture of the risotto. I am glad that mine turned out just right. With that runny yolk, sambal prawn, homemade sambal and deep fried to perfection ikan bilis, I said this is well played for a Mod Sin dish!
Beef Cheek Rendang ($25)
One of the most well loved dish around the table was this Beef Cheek Rendang. The 4 hours slow cooked beef cheek with spices does not disappoint, succulent with a tad of spiciness to give it the extra punch.
Christmas Waffle ($14)
What is life without dessert? This Christmas, Hyde & Co has launched a gingerbread waffle. The waffle has a soft fluffy texture like a bread that is speckled with cinnamon and anise in the recipe. Definitely a breath of fresh air as compared to the usual waffle. I have enjoyed the wine poached raisins but would prefer the caramelised apple slices to be softer.
All-Star Tea Affogato ($7.50 – Starting from top: Hamilton, Charlie, Matilda & Millie)
If waffles is too filling for you, there is Tea Affogato. An ice cream dessert that is served with a tea shot from Hyde Tea collection. Personal favourite is Millie, the one with vintage earl grey tea, orange zest and slices, as I like the citrusy notes. Some of my fellow foodies prefer Matilda (strawberry Ceylon tea with berry compote) while the others prefer Charlie (Chocolate Meringue Tea with salted chocolate dizzle). One of the more acquired taste is Hamilton which is Spiced Lasang Souchong with sesame.
With so many items to choose from, it is hard to finish all the items on the menu without going back over a few visits. I would suggest going with a few friends to share the food and try out more dishes. Afterall there aren’t many cafes in Singapore that served fusion food with a malay cuisine twist. Though there are hit and misses, I guess with more constructive feedbacks given, the menu would definitely shine some day.
